I'd increase the chicken broth and add the soy milk a little at a time until you get the creaminess you want. And you said no dairy, so I assume you'd remove the cheese as well, since this soup has a lot of it. In that case I'd add half to three quarters cup of dried potato flakes to help thicken the soup and make up for the missing flavors.
